AN EASY FAMILY FRIENDLY BURRITO CASSEROLE

Well, I gotta say, I was absolutely thrilled with how many of y’all loved the Bisquick Chicken Enchilada Bake recipe! In fact, I got a bunch of emails from folks wondering what other kind of Bisquick-inspired dinners I could share. The main point I heard over and over was – it’s gotta be easy and not a lot of ingredients.

QUICK AND EASY DINNER RECIPE

So I kept with the Mexican-inspired meal theme and just switched it up a bit. This time, we’re doing burritos! This bakes up beautifully and hey, who doesn’t love a bunch of ooey gooey melted cheese? Again, this one can be tailored to your family’s particular tastes. Throw in anything your family would love. Or set out a bunch of toppings and let your family serve themselves.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • Bisquick
  • refried beans
  • water
  • ground beef
  • taco sauce
  • shredded cheddar cheese

HOW TO MAKE BISQUICK BURRITO BAKE

Preheat oven to 375F degrees. Spray an 8-inch square baking dish with nonstick cooking spray.Begin browning and crumbling ground beef in a medium skillet over medium heat. Once fully cooked, drain excess grease.Meanwhile, in a medium bowl, mix Bisquick, water, and refried beans together.Spread this “crust “mixture into your prepared baking dish. Combine cooked (and drained) ground beef with taco sauce (I just do this right in the pan so as not to create any more dirty dishes.)

Spread ground beef mix over crust mix.

Sprinkle the top with shredded cheese.Cover baking dish with aluminum foil. Bake at 375F degrees for 25-30 minutes.

Cook’s Notes: Recipe can easily be doubled. Some suggested toppings are: sour cream, lettuce, diced tomato and olives. It’s perfect served with a fresh salad!

Ingredients

  • 1 cup Bisquick biscuit mix
  • 16 ounce can refried beans
  • ½ cup water
  • 1 pound ground beef
  • 8 ounce jar taco sauce
  • 1 ½ cups shredded cheddar cheese

Instructions

  • Preheat oven to 375F degrees. Spray an 8 x 8-inch (or 9 x 9) baking dish with nonstick cooking spray.

  • Begin browning and crumbling ground beef in a medium skillet over medium heat. Once fully cooked, drain excess grease.

  • Combine cooked (and drained) ground beef with taco sauce (I just do this right in the pan so as not to create any more dirty dishes.)

  • In a medium bowl, mix Bisquick, water, and refried beans together.

  • Spread this "crust" mixture into your prepared baking dish.

  • Spread ground beef mix over crust mix.

  • Sprinkle the top with shredded cheese.

  • Cover baking dish with aluminum foil.

  • Bake at 375F degrees for 25-30 minutes. Allow to cool for a few minutes then slice and serve.

    Yummy. I doubled the recipe for 2 night’s dinners And leftovers for lunch. I served with hot soft tortillas on the side, sour cream and Pico Degallo and it was so good. Enjoyed by all.

  2. I feel like the only person in the world who does not like refried beans. Does the baking time change if beans are not used?

  3. Could I use package taco seasoning by adding water to it or would that not be as good That is just what I have in my pantry but I am willing to buy the other taco sauce Thank you so much

    1. I use taco seasoning and diced tomatoes and chili instead of taco sauce. It is so good. I’m actually making it right now.

    Hi Brandie, This looks so good and I know my son and daughter-in-law would love this. But I do have a question. When you double this do you a bigger dish (like a 9×13). Thanks for any help you can give me. Have a wonderful and Blessed day. 🙂

  8. My concern is that the Sodium level is high for most that are on restricted sodium level. There no added salt to the recipe so most come from Bisquick and the refried beans. Is there a low Sodium Bisquick and refried beans on the market

    This was really good. I actually make homemade refried beans with garlic and onion powder and I added jalapenos on top of the cheese.. thanks for the recipe.

    I want to make this next time there is someone here to eat it besides me! I plan to save one more dish that you did as I will use my cast iron skillet that I brown the meat in and add the other ingredients and bake. Love cast iron ware.

    I added a layer of fresh spinach on top of the “crust” , then added the meat mixture before I cooked it. Just made it healthier. Used black bean decried beans too. Love black beans Healthy, too.
