Cornish game hens are stuffed and basted with a honey-orange sauce while cooking in the slow cooker.

ingredients
4 Cornish game hens
8 ounces stuffing mix, plus ingredients needed to prepare
1 large orange, peeled and cut into segments
1 cup chicken stock
1/4 cup fresh orange juice
2 tablespoons honey
1 1/2 teaspoon vegetable oil
1 tablespoon fresh lemon juice
1/4 teaspoon grated orange peel
directions
Season the hens, inside and out, with salt and pepper.
Prepare the stuffing mix as directed on package. Spoon the prepared stuffing into the cavity of the hens. Tie the legs together using kitchen twine. Place the hens in the crock pot, neck-side down (so the legs are pointing up).
Place the orange segments in the crock pot around the hens.
Combine the chicken stock, orange juice, honey, oil, lemon juice, and orange peel. Slowly drizzle the mixture over the hens to coat them.
Cover the crock pot and cook on low heat for 5-7 hours or until the hens are cooked. Baste the hens with some of the juices once or twice during the cooking time and again before serving.
Remove the hens from the crock pot carefully (they will be very tender) and serve.

January 15, 2017Delicious. I put the hens in the oven to brown them a bit. While they were roasting I put the juice in a put with some corn starch and thickened it to use as a gravy. Easy dinner.

Terrible recipe. Directions are vague at best. And I had to brown the hens in the oven for the last 20 minutes under broil.

June 24, 2013I cut this recipe in half because I have a smaller crock and 4 hens wouldn't fit in it (and I was only cooking for 2 but leftovers would have been fine). It turned out really good. I don't like the skin on poultry cooked in the oven so this made it really tender and moist and not that weird papery texture that you get with oven baked chicken and such. The stuffing was a bit moist but I'm more used to stuffing baked on the side, not in the bird, so maybe that's just me. I'll be making this again though.

January 29, 2011I made this recipe in July of 2010 and my picky husband LOVED it! I was surprised to hear this from someone who eats basic simple meals and dislikes too many ingredients mixed together. My mother came for dinner that evening and also raved about it! We all loved the aroma, flavor, and texture. Even my toddler liked it! Its a great family meal and doesn't break the bank to make. Also very easy to make too which is great for a mom on the go! I am making it again in January 2011 and hope it will turn out just as good. I'll be sure to let you know! FYI...in place of oranges, I used 2 clementines (they're much sweeter) and since the peel is thin, I minced a bit and threw it in the mix! And we use Simply Orange for the O.J. (it seems to offer a more exquisite taste). Also for healthier option, we used olive oil in place of veg. oil.

December 25, 2008I made this recipe for Thanksgiving. I only used three hens because of family size and I still had leftovers. It was easy to prepare and in about an half hour, I was off shopping. My family loved it and I loved that it was easier than cooking a turkey. I ended up making this recipe for Christmas also.

I literally put it together in 15 minutes before I left the house and my family had a healthy and very flavorful meal. I used two cornish hens, steamed rice and a side of veggies.

September 12, 2005Using stuffing mix made this crockpot recipe so easy to just "fix and forget". Note, 4 cornish game hens will fit only in the largest crock sizes. You could also do this in a roaster oven, just make sure to adjust for the loss of steam (baste more frequently and check the liquid levels). These did not have an overpowering orange flavor (which we were pleased about). We found them to be done in about 6 hours.
